One Pot Chicken, Broccoli and Corn Pasta was the most delicious surprise of combining some fresh chicken and broccoli, frozen summer corn and pantry pasta. The bonus is the creamy cheese sauce and the fact that it is all made in one pot in 30 minutes!

One Pot Chicken, Broccoli and Corn Pasta is going to be your busy school night best friend this fall! I topped it with a little more fresh shredded cheese and some microgreens for crunch and nutrients.

What You Need To Make One Pot Chicken, Broccoli and Corn Pasta

  • Dutch Oven or Large Pot
  • Yellow Onion
  • Boneless, Skinless Chicken Breast
  • Spices: Salt, Pepper, Garlic Powder, Thyme, Paprika
  • Broccolini or Broccoli Florets
  • Frozen Organic Corn
  • Chicken Bone Broth
  • Organic Grass Fed Whole Milk
  • Grain Free Pasta
  • Shredded Organic Cheddar Cheese **

How To Make One Pot Chicken, Broccoli and Corn Pasta

  1. Read through the entire recipe so you understand how it flows. Gather all your ingredients and supplies in one prep spot. 
  2. Heat a large pot or dutch oven over medium heat. Add 2 tsp extra virgin olive oil. Add onions. Sauté for 4-5 minutes. Add small diced chicken. Cook 5-6 minutes, stirring occasionally, until cooked through.
  3. Add spices (salt through paprika) to the chicken. Stir and cook 1 minute. Add broccoli and corn. stir and cook 2 minutes. Add broth and milk. Stir and bring to a boil. 
  4. Add pasta to boiling pot. Stir and reduce to a simmer. Cook for 10 minutes, stirring occasionally (or cook for however long the instructions say on the box of pasta you use). 
  5. Remove pasta from heat and stir in 1 1/2 cups shredded cheddar cheese. Stir. Serve warm topped with extra shredded cheese and microgreens. 
    **If you prefer a pasta with a little more nutty, salty flavor then you can use 1 cup cheddar cheese and 1/2 cup parmesan cheese

Ingredients

  • 2 tsp Extra Virgin Olive Oil
  • 1/2 medium Yellow Onion diced
  • 1 lb Boneless, Skinless Chicken Breast cut into bite size pieces
  • 1/2 tsp Salt

  • 1 tsp Garlic Powder

  • 2 cups Broccolini florets cut into small florets (can sub plain broccoli)
  • 1 cup Organic Frozen Corn (can sub fresh)
  • 2 cups Chicken Bone Broth
  • 1 1/2 cup Organic Grass Fed Whole Milk
  • 8 oz Chickpea Elbow Pasta
  • 1 1/2 cups Organic Shredded Cheddar Cheese grass fed if you can find it!
