Gluten Free Crock Pot Lasagna

You know how many crock pot recipes can taste the same? Not this Gluten Free Crockpot Lasagna Pasta! This stuff is so crazy good that I have made it twice in the last eight days. With fall sports in full swing, this mama needs all the easy dinners I can get!

There are honestly many crock pot lasagna recipes out there but this was a new concept to me because I am not a big lasagna person. So in true chef hillary fashion, I took what I really love and made this recipe. So while it is not a traditional layered lasagna.. it is all the flavors of a comforting lasagna but much easier… and much healthier!

So many crock pot recipes are either a soup or a main dish that you still have to do something with when done.. like a meat but nothing else. This is an all in one dish! Meat, veggies, pasta, cheese… you can eat this and nothing else! Or you can serve it with a side salad or steamed broccoli. It’s up to you!

Why Make Gluten Free Crock Pot Lasagna

  • Tomato sauce and spinach pack a punch with sooo many micronutrients like Vitamin A, C and Iron.
  • Chickpea Pasta- such a better option than traditional white flour pasta. You don’t get the same blood sugar spike as with traditional store bought pasta and you get extra plant based fiber, some calcium and iron.

How To Make Gluten Free Crock Pot Lasagna  

  1. Read through the entire recipe so you understand how the recipe flows. Gather all your ingredients and supplies in one spot.
  2. Heat a large skillet over medium heat. Add oil. Add onion and sauté 5 minutes. Add ground beef and cook until no longer pink, stirring and crumbling beef as you cook it. Add garlic powder, salt, pepper and Italian seasoning. Stir to combine. Add beef mixture to a greased crockpot. 
  3. Add marinara, water, pasta, spinach and 1 1/2 cups mozzarella cheese to the crock pot. Stir to combine. Add large spoonfuls of cottage cheese on top of the pasta mixture. Gently stir the cottage cheese into the mixture but don’t fully combine them… kinda leave some clumps. Sprinkle remaining mozzarella and parmesan cheese on top. 
  4. Cook for 3-4 hours on low. Serve! Enjoy topped with fresh microgreens and a side salad.
