Menu for the Week
We have had a crazy first few weeks of summer and I am ready to settle into a slower routine. To help make that possible I spent some time and made our menu for the week! And I thought I would share it with you!
Meal planning is shown to reduce stress, cut down on your grocery bill, reduce food waste and cut down on last minute eating out. Overall most people that meal plan end up eating more nutritiously throughout the week due the intentionality they put to make a plan.
My hubby got me a Blackstone Grill for Mother’s Day so we have had so much fun learning to cook on it. Many of the dinners I chose for this week can be done partly, or fully, outside on the griddle! While the recipe instructions are for indoors for most of them, since the Blackstone is basically a large cast iron skillet.. the recipes easily transition to outdoor cooking.
Lastly, I chose meals that come together in 30-40 minutes because we still have some late afternoon activities to do. I also included two breakfast dishes that will feed us a few mornings when we are trying to get out the door for vacation bible school. And… dessert… we always make a special dessert on the weekends and what is summer with S’mores!

I planned six dinners because one evening in the coming week we will be out with friends.
Summer Salmon Salads with Peaches
I love this salad! It is fresh but so filling due to the fatty fish, potatoes and avocado. The cheese provides salt and tang while the peaches are sweet. Don’t have peaches? Sub fresh mango or strawberries!
Hot Dog Hash
Summer means hot dogs. I must confess, I am going to sub mini chicken sausages because I bought a bunch at Sam’s and need to use them. That is the great thing about cooking.. it is so versatile! But I do love this recipe with the hot dogs because it is yummy, salty and reminds me of summer.
Summer Mexican Chicken and Veggie Bowls with Cilantro Lime Rice
Tons of summer veggies make this dish shine! I plan to cook the whole thing on our Blackstone!
Green Chili Turkey Burgers
Delicious, unexpected and fast.. these burgers are the best. I plan to serve them with guacamole, steamed broccoli and potatoes.
Tuna Bacon Patties
Another Sam’s club find means I have cans of tuna to use and this is one of my favorite ways to eat it! I will serve them with a fresh green veggies and sweet potato fries.
