My favorite part of this dish is how the hot dogs get almost a hard crust on them as they cook. The red peppers bring a little sweetness. Salty potatoes make the dish filling and creamy avocados bring a hint of freshness.

What You Need To Make Hot Dog Hash

- potatoes
- grass fed beef hot dogs
- onion
- bell peppers
- garlic
- avocado
How To Make Hot Dog Hash
- Heat oven to 425 degrees. Line a baking sheet with parchment paper
- Chop potatoes into bite size pieces-about 1/2 inch. Put on baking sheet. Toss potatoes with 2 tsp olive oil. Spread to a single layer. Bake 20 minutes.
- Meanwhile, Dice onion and peppers and slice hot dogs into coins. Heat a large skillet over medium heat. Add 1 tsp coconut oil to pan. Add sliced hot dogs and cook until all sides are browned, about 3 minutes per side. Remove hot dogs to a plate.
- Add veggies to skillet. Cook, stirring occasionally, until tender- 8-10 minutes. Add garlic and cook 1 minute. Add cooked hot dogs and stir.
- Remove potatoes from oven and add them to the cooked hot dog mixture. Stir to combine. Season everything with salt and pepper and cook 5 more minutes, stirring occasionally.
- Scoop into bowls and top with avocado!

- 1 pack Organic grass fed hot dogs sliced into coins
- 2 large Avocados diced
