Homemade Gluten Free Macaroni and Cheese

I am a child of the 80’s so I grew up on many a boxed dinner, including boxed macaroni and cheese. But this Homemade Gluten Free Macaroni and Cheese puts boxed ones to shame. It is so creamy and cheesy.. plus it is gluten free! Yes, it takes a little longer than opening a box… but not much longer! You boil some pasta in 10 minutes and make the sauce while the pasta boils!

You could eat the macaroni and cheese straight from the skillet but I love to load it in a baking dish, top it with more cheese and bake it so you get a cheesy crust on top!

I have served this for our family many times and everyone gobbles it up! I have also doubled the recipe, baked it in a 9×13 dish and served it to a crowd. Homemade Gluten Free Macaroni and Cheese would be a perfect Thanksgiving side dish, pot luck dish or take a friend a meal dish.

Why Make Homemade Gluten Free Macaroni and Cheese?

It is comfort food but also perfect for a summer bbq! Everyone loves a cheesy pasta and mine is made with chickpea pasta to keep things gluten free, add some protein and reduce blood sugar load.

This is the ingredient list for Kraft Mac and Cheese: ENRICHED MACARONI (WHEAT FLOUR, DURUM FLOUR, NIACIN, FERROUS SULFATE [IRON], THIAMIN MONONITRATE [VITAMIN B1] , RIBOFLAVIN [VITAMIN B2], FOLIC ACID), CHEESE SAUCE MIX (WHEY, MILKFAT, SALT, MILK PROTEIN CONCENTRATE, SODIUM TRIPHOSPHATE, CONTAINS LESS THAN 2% OF TAPIOCA FLOUR, CITRIC ACID, LACTIC ACID, SODIUM PHOSPHATE, CALCIUM PHOSPHATE, WITH OLEORESIN PAPRIKA, OLEORESIN TURMERIC, AND ANNATTO ADDED FOR COLOR, ENZYMES, CHEESE CULTURE).

No thank you. Annie’s makes a gluten free boxed macaroni and cheese that is a little better but still has anti caking agents, preservatives and is made with blood sugar spiking rice pasta. These things can be a blessing on a busy Thursday night but nothing beats homemade Mac and cheese.

How To Make Homemade Gluten Free Macaroni and Cheese

  1. Read through the entire recipe so you understand how it flows. Gather all your ingredients and supplies in one spot.
  2. Heat oven to 400 degrees. Grease an 8×8 glass baking dish with olive oil, coconut oil or avocado oil. Set aside. 
  3. Cook Pasta according to package directions. Drain and rinse pasta. 
  4. When pasta is almost done cooking, heat a large skillet over medium heat. Add butter to melt. Once melted, add flour. Whisk to combine. Cook, whisking, for 1 minute. Add milk, whisk, and cook for 3 minutes, stirring often. Add cups cheese and stir tougher. Add cooked pasta. Stir to combine. 
  5. Pour macaroni and cheese into greased baking dish. Top with remaining 1 cup shredded cheese. Bake for 20 minutes and serve. 

    I love to serve this dish with classics like Lemon Marinated Chicken and Kale Salad.

Notes

This dish can be made in advance (1- 2 days) and stored in the fridge BEFORE baking.
