Lemon Marinated Chicken
I have been making this chicken for 23 years. I can’t even believe I am old enough to say that. I vividly remember the first time I made this recipe. I was 18 years old and my extended family was in town to celebrate my high school graduation. I cooked for all of them and made this chicken. We have been loving it ever since! Lemon Marinated Chicken
A staple in our home for 23 years. This recipe is simple but delicious! Grab a lemon and make this today!
Ingredients
- 1/2 tsp lemon zest I love this microplane
- 1 lemon, juiced (2 Tbs) (juicer I like)
- 1 Tbs water
- 1 Tbs olive oil
- 1 Tbs honey
- 1 Tbs dijon mustard
- 2 tsp gluten free tamari soy sauce
- 1 tsp dried thyme
- 1/4 tsp pepper
- 1/4 tsp salt
- 2 lbs boneless, skinless chicken tenders you can use 2 lbs breasts and just adjust the cook time
Instructions
- Place all marinade ingredients in a small bowl. Whisk together with a small whisk.
- Place chicken in a large glass baking dish or a gallon ziplock bag. Pour marinade over chicken. Cover or seal and place in fridge for 30 minutes. Flip chicken and marinate 30 minutes more.
- When ready to cook, heat a grill over medium heat to 350 degrees. Place marinated chicken on grill and cook 3-4 minutes PER SIDE. Remove and serve with desired sides or on a big yummy salad.
- *If cooking chicken breasts increase cooking time to 6-8 minutes per side.
- *You can also cook the meat in a large skillet over medium heat. Add 1 Tbs cooking oil (avocado or coconut) to the pan and cook using the same cooking times.
