Ground Turkey Taquitos
I love Mexican food and was trying to think of an on the go version for soccer games.. enter these Ground Turkey Taquitos. Ground Turkey Taquitos are tacos you roll into small burritos and then fry up in a skillet. You can eat them immediately or wrap them in foil or parchment and take them on the go for dinner!
I love homemade Mexican/latin inspired food. This is my 17th recipe in a year and half that I have shared on here. You can see the rest HERE. I love how easy these recipes are to make. They usually simple, come together quickly, and pack lots of flavor. Tacos, Burritos, Enchiladas, Salads, Slaws, Skillet Bakes… we make them all! But this is the first time I have made a taquitos. Traditionally they are deep fried but I just lightly fry them in a skillet with just a little oil. They get crispy on the outside and the frying seals the tacos so the filling stays inside.
Why Make Ground Turkey Taquitos
I love a good taco but there is something about these pan fried taquitos that are so satisfying. They satisfy that junky, fried, fast food craving but are sooo good for you! How is that possible?
Ground Turkey is a lean, protein rich filling that keeps thing health forward.
Black Beans are full of healthy fiber that most people are lacking in. This benefits our heart and gut.
Grain Free Tortillas means lower carbs than a flour tortilla and less of a blood sugar spike. Plus Grain Free means less inflammation in our bodies which is a root of most chronic illnesses. Yay!
Another good reason to make Ground Turkey Taquitos is that you can customize them to your taste! Want lettuce in them? Great! A little salsa? Sure? Sliced Avocado? Go for it! Fresh sliced jalapeños or pickled onions? Whatever floats your boat. The options of what to add inside the taquitos or to serve on the side for dipping or sides is endless!
What You Need To Make Ground Turkey Taquitos
- Stainless Steel Skillet for cooking meat and beans
- Cast Iron Skillet for frying taquitos
- Ground Turkey
- Spices: Garlic Powder, Onion Powder, Chili Powder, Cumin, Salt, Pepper
- 14 oz can Black Beans
- Grass Fed Cheddar Cheese
- Lettuce
- Avocado
- Grain Free Tortillas
How To Make Ground Turkey Taquitos
- Read through the entire recipe so you understand how it flows and the time it will take. Gather all your supplies and ingredients one spot.
- Cook Meat- Heat a large stainless steel skillet over medium heat. Add 1 tsp coconut oil. Add ground turkey and cook, breaking into small pieces, until no longer pink. Add seasonings…garlic powder, onion powder, chili powder, salt, cumin and pepper. Stir to coat. Add drained and rinsed beans. Stir. Set skillet aside off the heat.
- Make tacos/mini burritos- Place a tortilla on a microwavable plate. Heat in the microwave for 10 seconds. Add 1 Tbs Cheese to the middle of the tortilla. Add 2 Tbs turkey and bean mixture. Top with lettuce and one slice of avocado. Roll into a mini burrito… turn sides of tortilla inward then tuck one end of the tortilla over the fillings and roll burrito. - Repeat the process until you have made all the taquitos.
- Heat a large cast iron skillet over medium heat. Once hot, add 2 Tbs avocado oil or grass fed butter. Add as many taquitos as you can, probably 4-6. Cook for 2-3 minutes, turn taquito to another side and cook 2-3 minutes. Repeat this process until all the sides are browned.
- Serve hot taquitos with salsa, sour cream, guacamole, Mexican Slaw.. whatever you want! **see recipe notes below

Ingredients
- 1 lb Ground Turkey could easily sub ground beef
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 tsp Chili Powder
- 1/2 tsp Salt
- 1/2 tsp Cumin Powder
- 1/2 tsp Black Pepper
- 1 can Black Beans drained and rinsed
- 2 cups Grass Fed Cheddar Cheese shredded
- 1 cup Baby Lettuce
- 1 large Avocado ripe, sliced
- 12 Grain Free Siete Almond Flour Tortillas
Instructions
- Heat a large stainless steel skillet over medium heat. Add 1 tsp coconut oil. Add ground turkey and cook, breaking into small pieces, until no longer pink.
