Corn and Cotija Salsa
Crunchy, sweet, salty, cheesy, creamy… this salsa has it all. Plus is is crazy easy to make. A little veggie chopping, some pantry staples and you’re done! I love pairing it with my Honey Lime Marinated Chicken but it is also good over grilled Salmon, as a topping on tacos, on taco salads or just eaten alone!

Corn and Cotija Salsa

Ingredients
Salsa
- 6 ears fresh corn, kernels removed
- 1/2 red bell pepper, diced
- 1 large avocado, diced
- 1/2 cup crumbled Cotija cheese
- 1/4 cup minced fresh cilantro
- 1/4 cup diced pickled onions one of our fav ingredients ever
Dressing
- 1 lime juiced
- 1 tsp raw honey
- 1 tsp extra virgin olive oil
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 tsp chili powder
Instructions
- Place corn, bell pepper, avocado, Cotija cheese, cilantro and pickled onions in a medium bowl Stir together.
- In a small bowl, place lime juice, honey, olive oil, salt, pepper and chili powder. Whisk together. Pour over the corn mixture. Stir and serve. Store any extra salsa in the fridge for 1-2 days.
