These are the easiest Enchiladas ever. 6 Ingredients, some pantry spices and you have the most delicious and saucy enchiladas. The tortilla gets nice and crispy on the outside and there is a flavorful beef mixture on the inside. Shhh.. don’t tell your kids that there are veggies hidden in the beef mixture! They will never even know 😉

Easiest Beef Enchiladas

Cheesy, Flavorful, gluten free and easy… these beef Enchiladas are a family favorite.

Ingredients

  • 1 small yellow onion, diced
  • 1 lb grass fed ground beef
  • 2 cups diced kale leaves
  • 1 recipe enchilada sauce see recipe below to quickly whip up
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1/2 tsp cumin powder
  • 1/2 tsp oregano
  • 1 tsp salt
  • 1/2 tsp pepper
  • 10 Siete Almond Flour Tortillas
  • 1 1/2 cups shredded Mexican cheese or cheddar cheese

Enchilada Sauce

  • 1 14 oz can organic tomato sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1 Combine all ingredients in a small bowl.

Instructions

  • Heat oven to 400 degrees.
  • Heat a large skillet over medium heat. Add 1 Tbs coconut oil. Add diced onions to pan and stir. Sauté, stirring occasionally, until tender.. about 5 minutes. Add ground beef to pan. Break up beef with a wooden spoon into small pieces as it cooks and stir to mix beef with the onions. While the beef cooks, make the enchilada sauce and chop the kale.
  • Once the beef is fully cooked (no more pink), add the kale the pan and stir to wilt. After 1 minute, add 1 cup enchilada sauce to the pan. Stir and remove the pan from the heat.
  • Place the remaining enchilada sauce in the bottom of a 9×13 glass pan. Using a spoon, spread the sauce out into a single thin layer over the bottom of the whole pan. Place a tortilla on a plate. Scoop 2-3 Tablespoons beef mixture in the middle of the tortilla. Roll the tortilla up tightly and place it in the 9×13 pan. Repeat with remaining tortillas and beef. Sprinkle cheese over the tops of the rolled enchiladas.
  • Bake for 18 minutes. Remove and serve! We like to eat ours with some homemade spiced black beans and a green vegetable like steamed broccoli or a my Mexican slaw.
