It’s that time of year…. everyone is busy and we need dinners that are quick, easy, delicious and nutritious! Well look no further than this yummy hash. 30 minutes, 6 ingredients and dinner is served! My family has been enjoying this meal for over 10 years and everyone loves it.

A quick, wholesome 30-minute one-skillet meal made with sausage, sweet potatoes, kale, and apple. This cozy Harvest Hash is packed with flavor and perfect for busy weeknights!
Prep Time:30 minutes

Ingredients

  • 2 medium sweet potatoes
  • 1 lb breakfast sausage of choice I use turkey
  • ½ medium sweet onion, diced
  • 1 gala apple, diced peel on
  • 1 tsp ground cinnamon
  • 3 cups chopped kale or spinach
  • 2 avocados, diced

Instructions

  • Heat oven to 425. Line a baking sheet with parchment paper. Peel potatoes and dice them into small pieces. Place on baking sheet. Toss in 1Tbs olive oil. Spread into a single layer, sprinkle with salt and bake for 25 minutes, until tender. 
  • Heat a large skillet over medium heat. Add 1 tsp olive oil. Add sausage and cook, crumbling as you cook, until thoroughly cooked. Drain in colander. Add another tsp oil to pan if it is dry, add diced onions. Cook, stirring as you cook, for 3-5 minutes until tender. Add apples and cook another 5 minutes until tender. Add cinnamon to pan and stir. Add sausage back to pan. Stir. Add kale and stir. Cook for 3 minutes until wilted. Add cooked sweet potatoes. Stir. 
  • Serve in bowls topped with diced avocado!
