Pimento Cheese
I grew up in the South but I must confess I never tried Pimento Cheese until I was an adult. I was not an adventurous eater and am still not today compared to some people. But I did finally try pimento cheese and it is so delicious spread over a cracker. I mean… it’s cheese. And while pimento cheese is widely available in southern grocery stores, the ingredient lists on these premade spreads will make you want to puke. They are long and full of things that shouldn’t be there like preservatives and corn syrup.
This is just one those recipes that it is so easy to make yourself that you might as well! Plus when you are going to eat mounds of dairy… you want it to be the best dairy out there.
You want to control the ingredients that are going into your Pimento Cheese. This means buying Organic, Grass Fed Cheese if you can AND Organic Full Fat Cream Cheese. You also want to make sure you don’t buy canned pimentos that have added coloring. Lastly, the mayonnaise you use is a huge opportunity to add nutrients or inflammation. We like Sir Kensington’s Avocado Oil Mayo for its ingredients and I like the taste of it best. Chosen Foods Avocado Oil Mayo is also an excellent.

Appetizer, snack, lunch… this cheese dip does it all. And while it is not the healthiest dip out there, it is also not the worst. Organic cheese is an excellent source of protein and fat while having very few carbs. Much of the fat is saturated fat so you don’t want to live off of pimento cheese everyday, but it is perfect for a party, small group, picnic, holiday appetizer or to make for lunches for a week every few weeks.
Calcium, Phosphorus, Vitamins A and B12 plus some minerals means you are getting some key nutrients in this dish too! I like to serve ours with grain free crackers to keep the inflammation down without sacrificing taste. Our favorites are Absolutely Gluten Free Crackers or Simple Mills Almond Flour Crackers.
What You Need To Make Pimento Cheese
A stand mixer works best for combining everything. You can grate your cheese by hand using a box grater or you can use a Hand Crank Cheese Grater since it is so much cheese to grate. The food ingredients you will need are:
- Organic Full Fat Cream Cheese
- Avocado Oil Mayonnaise
- Organic Dijon Mustard
- Black Pepper
- Organic, Grass Fed Cheddar Cheese
- Organic, Grass Fed Monterey Jack Cheese (or mozzarella cheese for a milder flavor)
- Sliced Pimentos
- Dried Dill
How To Make Pimento Cheese
- Read through the entire recipe so you understand how it flows and the time it takes to make it. Gather all your ingredients and supplies in one spot.
- Add softened cream cheese, mayonnaise, mustard, and pepper in the bowl of a stand mixer. Mix together. Add shredded cheeses and mix together. It will form into a large clump.
- Stir in diced pimentos and dried dill using a large spatula or spoon. You can serve immediately but this dish is best refrigerated for 2 hours, then served with grain free crackers or grain free almond flour crackers. Store any leftovers in the fridge.

- 4 oz Cream Cheese Full fat, softened
- 1/4 cup Mayonnaise Sir Kinsington or Chosen Foods Brand
- 1 Tbs Dijon Mustard
- 1/2 tsp Black Pepper
- 8 oz Sharp Cheddar Cheese
- 8 oz Monterey Jack Cheese
- 4 oz Jarred Sliced Pimentos Drained and Chopped
- 1 tsp Dried Dill
Instructions
- Add softened cream cheese, mayonnaise, mustard, and pepper in the bowl of a stand mixer. Mix together. Add shredded cheeses and mix together. It will form into a large clump.
