Chicken Cobb Salad with Honey Mustard Dressing

The sun is shining, warmer weather is here and we are craving lighter meals that keep us full… enter my Chicken Cobb Salad with Honey Mustard Dressing. It’s strange, lettuce is seasonally grown outdoors in the winter but I often find we are wanting lots of salads for dinner in the summer. Fresh greens topped with fresh, seasonal produce leave me feeling satisfied.

And this delicious combination does not disappoint. Atop a bed of greens, Honey Mustard Chicken is combined with hearty boiled eggs and bacon then topped with fresh cucumber, avocado and summer corn. And don’t forget the unexpected salty, roasted potatoes that add the perfect, keep you feeling full fiber and flavor. You will crave this salad time and again.

Why Make Chicken Cobb Salad with Honey Mustard Dressing?

What You Need To Make Chicken Cobb Salad with Honey Mustard Dressing

Supplies:

Baking Sheet x 2, Unbleached Parchment Paper, Aluminum Foil, Medium Stainless Steel Pot, Cutting Board, Sharp Knife, Corn Peeler (or use a knife), Grill or Cast Iron Skillet

Ingredients:

  • Raw Honey
  • Dijon Mustard
  • Whole Grain Mustard
  • Olive Oil
  • Salt and Garlic Powder
  • Chicken Breasts or Tenders
  • Gold Potatoes
  • Uncured Bacon
  • Large Eggs
  • Fresh Corn
  • Mini Cucumbers
  • Avocados
  • Organic Spring Mix Lettuce

How To Make Chicken Cobb Salad with Honey Mustard Dressing

  1. Read through the entire recipe so you understand how it flows. This recipe has a few moving parts to it compared to many of my recipes. BUT, if you read through it first, I show you how to flow from one task to the next so the recipe is fun to make and delicious to eat. Gather all your ingredients and supplies in one spot.
  2. Marinate Chicken: Add all marinade ingredients to a bowl and whisk them together. Trim chicken of any excess fat. Place chicken in a ziplock bag. Pour half of marinade over chicken. Place chicken in fridge to marinate for at least 2 hours and up to overnight. Put the rest of the dressing in the fridge to save for the salads. 
  3. Heat oven to 425 degrees. Line a baking sheet with parchment paper. Slice potatoes into bite size pieces. Drizzle with 1 Tbs olive oil and toss to combine. Sprinkle potatoes with 1 tsp salt and bake for 30-40 minutes until tender and browned. 
  4. While the potatoes cook, line another baking sheet with aluminum foil and then parchment paper on top. Add 6 slices of bacon. Bake for 15-25 minutes, depending on thickness, until crips and brown. Remove bacon to a paper towel lined plate to cool. 
  5. Place eggs gently in a medium pot. Cover with water. Bring to a boil, reduce heat to a simmer and cook for 8 minutes. Drain water from eggs and add cold water. Allow eggs to fully cool. When ready to prepare the salads, peel and chop eggs. 
  6. Remove corn kernels from Cobb using a corn peeler or knife. Slice cucumbers. Cut avocados in half, remove seed and slice avocado into bite size pieces. 
  7. Heat grill to medium heat (about 350-400 degrees). Cook chicken for 5 minutes per side. Slice chicken. 
  8. Assemble the salads: Place salad greens on each plate or bowl. Top with sliced chicken, sliced cucumbers, diced avocado, roasted potatoes, diced eggs, crumbled bacon and fresh corn. Drizzle with honey mustard dressing.

  • 1 lb Thin Sliced Chicken Breasts or tenders* see note for cooking time
  • 3 cups Diced Yellow Potatoes about 6 medium potatoes
  • 6 large Eggs
  • 6 pieces Uncured Bacon
  • 3 ears Fresh Corn
  • 3 mini Cucumbers
  • 3 large Avocado
  • 12 cups Organic Spring Mix Lettuce

Instructions
