Shepherd’s Pie
This simple, gluten free (dairy free option) is as satisfying as they come. No need to fear cold winter nights with this comforting, healthy dish on your dinner menu. It takes less than 30 minutes to bring together too so it is a win for busy families. Don’t be intimidated by the ingredient list! This dish can even be made ahead of time and then finished in the oven later in the day!

Shepherd’s Pie
A classic made clean. This hearty meal is sure to please the dad's and hearty eaters of the family but is made lighter with fresh vegetables and clean ingredients.
Ingredients
- 2 Tbs olive oil
- 1 lb grass fed ground beef
- 1 small yellow onion, diced
- 3 large carrots of any color, peeled and diced
- 3 large celery stalks, diced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 3 Tbs tomato paste
- 2 Tbs tapioca flour
- 1 1/4 cup beef broth
- 1 cup frozen peas
Mashed Potato Topping
- 4 medium red potatoes, peeled and large diced
- 2 Tbs milk of choice
- 2 Tbs grass fed butter
- 1 tsp salt
Instructions
- Place cut potatoes in a medium pot. Fill with water until the water covers all the potatoes. Bring to a boil, lower heat to simmer and cook until potatoes are tender… about 15 minutes. When done cooking, drain all water and return potatoes to pot. Mash potatoes with a potato masher or a fork. Add milk, butter and salt. Stir to combine. Set aside
- While the potatoes cook, heat a large skillet over medium heat. Add 1 Tbs olive oil. Add ground beef and cook until no longer pink, breaking up into small pieces as you cook. I like to use a wooden spatula like this one. Drain cooked beef in a colander and set aside.
- Add 1 Tbs olive oil to the same skillet. Add diced onion, celery and carrots. Cook, stirring occasionally, until tender, about 10 minutes. Add salt, pepper, garlic powder, paprika, tapioca flour and tomato paste to veggies. Stir to combine and coat the veggies. Add frozen peas. Stir. Add beef broth and stir to combine. Add beef to veggie mixture and stir. Pour into a greased 11×7 glass pan. Top with mashed potatoes and smooth them evenly out with a fork.
- Bake at 350 degrees for 30 minutes and enjoy!
